I really miss the old wordpress dashboard. I think that the new one (yes, I finally moved over to the newest version) is horrible looking and hard to navigate. I wish I could go back to the old version without all the security holes. Ah..Does anyone else find the new dashboard a bit annoying?

Easy Fish and Chips Recipe

Fish and ChipsI come from an Irish family and one of my favorites in my old Irish town was fish and chips. I haven’t quite mastered the beer batter they use in East Durham, but I have invented my own easy at home recipe that tastes pretty good.

What you will need:

1 lb Russet Potatoes
Salt
Pepper
Old Bay Seasoning (Optional)
Olive Oil Cooking Spray
1 Egg
1 Cup Flour
1/2 Cup Milk
1 Tsp of Baking Powder
Cod Fillets (As many as you would like)
1/4 Cup Cider Vinegar
2 Tbsp of Honey
2 Baking Sheets lined with foil
1 Large Bowl

2008 Volkswagen New Beetle W3

Or something of that nature.  We went to the dealership to check out new Volkswagens and N* and I spotted our eyes on a cute beetle. She was perfect. All white and pretty!! I really hope that N* decides this is the car that he wants and buys it in the next two weeks!

Tzatziki Sauce

At work today I tried something new for lunch. It was a chicken gyro from Local’s Corner restaurant. It was a greek version with tzatziki sauce. I was leery about trying something with such a funky name but it was worth a shot. I absolutely loved it! I loved it so much that I needed the recipe to make this dish at home.

Here is the worlds best recipe for tzatziki sauce. You can use it on gyros, sandwiches or even just to dip veggies in. Its fab.

Movie Review: The Happening

N* and I visited Market Commons to check out The Happening on opening night. Although this movie received less than raving reviews, I thought that it was worth a shot (that and Mark Wahlberg is gorgeous). Please note that this review may contain spoilers.

Mark Wahlberg plays a recently married high school science teacher. He is married to Zooey Deschanel who thinks that she is cheating on her husband by eating tiramisu with a co-worker. John Leguizamo is also in the movie playing a good friend of Wahlbergs. The basic plot line is that as the wind blows people are affected by something that causes them to become disoriented and ultimately kill themselves.

The acting in this movie was a bit lackluster but I thought the storyline was creative and thought provoking. The idea of plants coming together and recognizing humans as a threat was a great play on today’s biological headlines. I was discussing this movie long after we had left the theater. Could this event actually be possible? Are their events around us that we are not taking a look into that are Mother Nature’s way of telling us to slow down?

After the movie, I found myself talking to my plants a little more often and discussing recycling with N*.

1. Police shoot man as he beats toddler to death:
I don’t know what this guy was thinking. Secondly, the people who saw this happening just let the guy push them away as he stomped the two year old? I’m sorry but if I see something like this happening (not that I have) but my adrenaline takes over and I would have taken that guy out. I don’t care how much bigger than me he is.

2. Police investigate wife of five dead husbands:
Why didn’t they catch on after 3 dead husbands? Why does she look like she lives in a trailer in the back woods if she has got the income of five dead men?

3. Mother abandons child at Walmart:
Because he could have totally survived on the GI Joe in his backpack. I hope he has a green card.

3. Local DMV banning WTF on license plates:
All I have to say is WTF?!

Movie Review: The Strangers

The movie trailer was enough to catch my interest and send a few chills down my spine.
The Strangers’ main plot is a couple travels to a home in the back country and they are terrorized by complete strangers for no apparent reason. The Strangers is the first movie directed and written by Brian Bertino and I must say this is a great movie to start your professional career off with.

I have to fears in this world: aliens and suffocating. N* woke me up just as I was falling in a deep sleep last night to tell me that a video was to be released today proving that aliens exist. I spent the rest of the night hyperventilating and in tears ( thats how afraid I am of aliens). I woke up this morning actually interested in this so called proof that aliens do exist.

The video was to show an alien figure of 4 feet tall peering into a window, blinking his eyes and scanning a room. I waited all day searching for this video only to find out a few minutes ago that Jeff Peckman is not releasing the footage to the public because he sold the footage to Stan Romanek for his documentary. After a little searching I did find a still photograph from the video:

I saw this photo and began to laugh. This video is a fake just like the millions of others on the internet and I was totally dissapointed. What do you think about this video still?
