I come from an Irish family and one of my favorites in my old Irish town was fish and chips. I haven’t quite mastered the beer batter they use in East Durham, but I have invented my own easy at home recipe that tastes pretty good.
What you will need:
1 lb Russet Potatoes
Salt
Pepper
Old Bay Seasoning (Optional)
Olive Oil Cooking Spray
1 Egg
1 Cup Flour
1/2 Cup Milk
1 Tsp of Baking Powder
Cod Fillets (As many as you would like)
1/4 Cup Cider Vinegar
2 Tbsp of Honey
2 Baking Sheets lined with foil
1 Large Bowl
Preheat Oven to 425 degrees.
1. Peel and slice Russet potatoes. Try to aim for 8 wedges from each potato.
2. Add salt, pepper and old bay seasoning (if desired) to potatoes.
3. Place on a foil lined baking sheet.
4. Spray potatoes with olive oil cooking spray.
5. Bake in oven for 25 minutes.
1. Mix the egg, flour, milk, baking powder and about a tsp of salt in a shallow pan.
2. Dredge cod fillets in mixture.
3. PLace fillets on foil lined baking sheet.
3. Bake for 10-12 minutes with potatoes.
1. Mix cider vinegar and honey for a nice dipping sauce for the fish.
